Our People

At Wild Carrot, our team is just as important to us as the food we serve. We are proud to be part of a team of local and international food and drink enthusiasts and culinary professionals, trained to the highest standard to deliver welcoming, personal service, ensuring everyone feels at home in our Restaurant and Bar.

Executive Chef

Paolo Belloni

Working with Four Seasons since 1997, Paolo has travelled the world, working with top chefs including Sergio Mei, Sebastiano Spriveri and Vito Mollica. When making his dishes, Paolo believes that the dishes should be kept simple, based on three components.

“I love the creativity that comes with cooking and when making my dishes I try to show the connection with nature and produce. I don’t like to over complicate my meals as I want the ingredients to showcase themselves.”

Our Team

From our hosts and waiters, our chefs, mixologists and sommeliers, our team is passionate and dedicated to delivering a seamless culinary experience to always remember.

From our Bar Manager James, a Hampshire boy born and bred, who joined us as a food-runner when he was only a teenager, to Hostess Arielle, who joined us all the way from San Francisco, to charmingly welcome our guests into Wild Carrot, each one of our team members is at hand with expert knowledge to deliver an exceptional experience.

Winter Menu at the Restaurant

As the nights draw in our Chefs have created a selection of dishes inspired by the seasonal ingredients grown and produced in and around Hampshire. From hearty Cauliflower & Montgomery Cheddar Soup to Wellington of Salisbury Venison Haunch and a side of Watercress Salad, Hampshire’s very own staple ingredient.
